PeopleIngredients
- 1 cup Akha Urad dal
- 1tbsp ginger
- 6-7 peppercorns
- few curry leaves
- 2-3 green chilli
- Salt to Taste
- 1tbsp rice flour
Method
- Soak urad dal for 5-6 hours and grind it with 2-3 tbsp water. The batter should not be runny or rubbery
- Add chopped green chilly, salt, rice flour ginger pepper corns curry leaves and coarsely grind it
- Leave the batter to ferment for 3-4 hours
- On Greased baking tray drop batter using rounded tablespoon and flatten it, make a hole in centre. Brush all the vadas with oil so that top remains moist ...This is to prevent surface from drying
- Preheat the oven to 180. Bake for 25-35 min until it becomes brown...When 50% time elapses, turn the vadas over and continue baking. This is to ensure even browning
- Allow it to cool slightly and serve...Baked vadas are ready to eat
My Tip:
You can bake it without fermenting too, Just pour the batter thick...Fermenting enhances taste and allows vada to rise
