Cheesy Spinach (Palak) Bites
These bites are gooey and yummy. You can have these snacks for parties, with cup of Tea/Coffee or for tiffin too

- 1cup finely chopped spinach
- 2 medium boiled potato
- 1 small onion chopped
- 1/3-1/2 cup shredded cheese (adjust)
- 1egg lightly beaten
- 1cup bread crumbs
- 2garlic cloves minced
- 2tbsp Milk
- Salt pepper red chilli flakes to taste
- 1/2 tsp Lemon Juice
Method:
- Saute onion and garlic with 2 tbsp melted butter or olive oil until onion becomes translucent and raw aroma goes away. Add spinach and sauté until spinach becomes tender and wilted. Switch off and allow it slightly cool
- In a bowl mash potatoes and milk with a masher. To this add spinach mixture and mix well. Now make a well add bread crumbs salt pepper red chilli flakes cheese lemon juice.mix everything well properly. Allow this soft dough to be refrigerated for 20-30 mins.
- Heat oil in a wok, make balls and fry them on medium flame for not more than a minute. Do not over fry,all the ingredients are already cooked and we do not want cheese to become messy. In case you find it messy to fry, you can always skip cheese while making dough. Once you make the balls, you can make hole add small amount of cheese and seal it and then fry. Whatever be the method, do not over fry due to presence of cheese
- Fry them in batches, allow excess oil to be absorbed by absorbent towel. Serve hot with Sauce or ketchup
