Potatoes in Spicy Coconut gravy
Yummy lip smacking dish, it goes well with Roti and rice...
Ingredients
- 4-5 medium potatoes peeled and cubed
- 11/4 cup freshly grated coconut
- 1 small onion roughly chopped
- 1 medium tomato finely chopped
- 1TBSP RED CHILLI POWDER
- 1TBSP CORRIANDER POWDER
- 1/4 tsp Turmeric
- Salt and pepper to taste
- 1tsp garam masala
- 1/2 tsp Cumin powder
- 3-4 sprig curry leaves
- 1/2 tsp lime juice (optional)
- Coconut oil
Method:
- Take a pan, add 4-5 tbsp coconut oil, you can use vegetable oil, I prefer coconut oil as it enhances the flavor of the gravy
- To this add onion, coconut, curry leaves. Saute until coconut is browned. Add all the masalas including pepper. Don't add salt. Now saute for few minutes. Switch off the flame.Allow it to cool. Once cooled grind it to a fine paste
- In same pan now add the paste add 2 cups of water, tomato and potatoes. Bring it to boil. Cover and cook on low to medium flame until potatoes are done. Keep stirring in between. If you want to reduce the cooking time, you can always add potatoes which are already cooked 50%.
- Add salt , lime juice, garnish with coriander leaves and serve hot with rice or roti.
